Easy Veggie Quesadillas Using Spinach Artichoke Dip

If you love spinach artichoke dip, then you are going to love these quesadillas! Whip these up for a quick supper that everyone will enjoy! Customize by adding any veggies you have on hand. Use your leftover Taste of the South Spinach Artichoke Dip on other delicious meals like on pizza, over rice, or even on pasta with chicken!

Directions:

  1. Add a pat of butter to a cast iron over medium heat.

  2. Place one tortilla in the pan over top of the melted butter.

  3. Scoop out spinach artichoke dip onto the tortilla and spread it out across one half.

  4. Place a handful of spinach and shredded mozzarella cheese over top for some extra veggies.

  5. Fold the other half of the tortilla over the filling side. Heat for 1 to 2 minutes per side, until lightly browned.

  6. Cut into 3 triangles. Serve hot or warm.

  7. Enjoy!
